Pasta with Tuna and Peas

This is a quick and tasty recipe for pasta with tuna and peas.  It will take you back to the days of tuna noodle casserole but with a quick and easy cooking time.  

I have made this with linguine and bucatini, both worked well.  Bucatini is a pasta that is round and thick like spaghetti but has a small hole in the middle.   You can also use pre-cooked chicken in place of tuna.  Great use for leftovers.

What You’ll Need:

  • 3 ounces of pasta
  • 1/2 cup green peas
  • 3/4 cup milk
  • 1 tablespoon flour
  • 1 small can water packed tuna
  • 3 tablespoons grated Parmesan cheese
  • Sea salt and pepper to taste

Note:  all ingredients are organic

Let’s Make It

In a large pot good pasta according to package instructions.  A few minutes before pasta is complete, drop in the peas for the last minute of boiling.  Drain and rinse with cold water.

In a 10-inch skillet whisk together the flour and milk.  Cook over moderate heat stirring constantly.  Cook until slightly thickening about 2 minutes.  Add in pasta, peas, tuna, salt and pepper.  Toss to coat well.  The sauce will continue to thicken, if needed add a touch more milk as it sits.  Before serving stir in parmesan cheese.
